Alaskan cod with almonds and coconut
1 package of frozen Alaskan cod
8 tablespoons almond slices
3 tablespoons coconut flour
Partly unfreeze the cod fillets, dry them, season with salt, oregano and a pinch of pepper. Mix the breadcrumbs, almonds and coconut. Whisk and salt the eggs and coat the fillets in flour, eggs and breadcrumbs mixed with coconut and almonds. Coat again in eggs and the breadcrumb mixture and immediately fry in hot oil, fry slowly so that the almonds are crisp.
